Meal plan for December 30th - January 5th

Hello friends!  How was your holiday?  Ours was lovely and crazy, and went by too quickly.  We had Troy home for longer than normal, and it was a treat, and also a reminder how much it will suck when he goes back to his crazy pants schedule.  But we enjoyed him while we could, and he did some much needed stuff around the house.

Last Saturday, we left for Ocean Shores for a few days.  My in-laws have a house there, and because of Troy's schedule, we're almost always unable to use it.  We played on the beach, and fed the deer that are pretty much permanent residents in my in-laws yard.

Christmas was spent with Troy's side of the family, and we'll celebrate with my side later today.  I got some lovely kitchen items (I'm so easy to shop for!) and this awesome sign from Amazon:

My mother-in-law also gifted me bacon candy canes.  Oh yes.  Am I eating these?  Oh hell no!
And Troy's aunt bought me this:
I opened it up and said "Aunt Kim, you bought me porn"?  So yeah, that happened.

I made Jack a superhero quilt.  Yes, I made one last year, I know.  But I was told around February that "I like the quilt enough mommy (enough??), but it isn't really cozy".  So this year, I made an easier top, and the world's coziest back with Star Wars fleece.

While making the quilt, I wanted to make sure it fit Jack's bed.  He is such a sound sleeper, that I was able to spend about 10 minutes moving it around his bed until I had the measurements just right.  He was passed out the whole time!

Anyone want a tip for putting away your Christmas ornaments in a nice and organized fashion?  We buy organic apples from Costco (in our stores they're all Washington grown) and save the plastic containers because they rock for storing balls (hee hee) and other small ornaments. 

We finally had enough of these this year to downsize our Christmas decorations from four boxes of random bags and boxes of ornaments, to only two boxes of everything.  Hot dang!

Yesterday, Jack and I made some apples for dehydrating.  Our time has been spent recently watching a bit too much Netflix (ahem), so I wanted the two of us to work on something that didn't involve screen time.  I forgot how long it takes to do stuff with kids (he randomly went and brushed his teeth twice while we were working in the kitchen), but I think he enjoyed it, and I got a (rare) unsolicited hug with a "this is so fun mom", so totally worth it in my book.

While we were using our apple peeler, Jack snagged the peel and said "it's a gummy worm mommy".  Yep, dude, it totally is.
We dried two batches of apples in our dehydrator (Christmas gift from about eight years ago), and made a gallon of dried apples to snack on and enjoy.  And it was screen-time free!

Meal plan time!  Reminder, I only plan dinners.  My breakfast of choice has changed, and I'm now obsessed with homemade Greek yogurt with tons of cut up fresh fruit, and a homemade granola bar crumbled on top.  It's delicious and keeps me completely full and satisfied until lunch. Lunches are always leftovers.  We rarely eat dessert during the week, and our dinner drink of choice is water kefir soda.

Monday:: This recipe again, but with wild Alaskan cod, salad, and Lazy Lady roasted potatoes.

Tuesday:: I have no idea.  Isn't that bad?  I think I might be naughty and get take out.  Shhhh.

Wednesday:: Frittata, salad, and fruit.

Thursday:: Homemade pizza, salad, and fruit.

Friday:: Popcorn dinner.  Yes, seriously we eat popcorn for dinner.  It's popcorn, leftovers, cheese slices, fruit, and cut up veggies.  Everyone gets as much as they want, and no one leaves hungry.  I adore Fridays because it is the easiest night of the week for making everyone happy!

Saturday:: No idea, but I'm thinking chili and cornbread with some salad.  Something easy, warm, and filling. 

Sunday:: Family dinner at my parent's.  We'll contribute something, but I never know what it is until Thursday-ish when the group emails back and forth.

I didn't spend any money on groceries this week, because I've been a slacker and haven't gone grocery shopping!
