Meal plan for August 26th - September 1st

Lord almighty, I am in love!  Have you seen the work of Portland artist Joe Wirthheim at The Victory Garden of Tomorrow?  Every time I see one, I think "this one is my favorite", but then I see another one, and decide that my favorite has changed!  So, I'm narrowing them down to my top four:



So, so much love right now.

Wednesday night, we had a "boys of the street" dinner at our house.  There are four little boys, including Jack from ages two to four on our street, and we all have a great time playing together.

I made tomato soup, quesadillas, caprese salad, and homemade fridge pickles.  Except, the tomato soup I made was TERRIBLE.  Usually, kind of a no brainer, but this one turned out crazy sweet; it was like candy soup.  I couldn't serve it to our guests, so we ended up basically eating quesadillas for dinner.  Oh well, mistakes happen; we're human, not robots.  The good news is, three of the other adults had never had caprese salad before (NEVER), so I was able to introduce them to the amazeballs that is tomato, creamy mozzarella, fresh basil, olive oil, salt, and pepper.

After dinner, we headed up to one of the neighbor's yards to roast marshmallows and make s'mores.

Thursday night, Jack and I set up the tent on the deck and "camped" out all night.  Our Friday night camping trip was cancelled because of Troy's last minute test on the Saturday morning.  Probably for the better, as Friday night was really freaking windy and a bit drizzly.
The deck is too small to expand the front part of the tent, so we just left it all bunched up.

Friday, we went to the local fair.  Jack has been excited about this for MONTHS, so naturally he woke up with a 99.4 temp.  Screw it, we went anyway.  Mother of the year.

He played a dart game, and ended up knocking down three balloons with only two darts.  Homeboy has skill, but received only a very small teddy bear in return.  Oh well, he loves it, and he earned it.

Which became one gallon of fridge pickles, and four pints of "Heirloom Salsa", recipe from Put Em Up.

Meal plan time!  Reminder, I only plan dinners.  My breakfast of choice has changed, and I'm now obsessed with homemade Greek yogurt with tons of cut up fresh fruit, and a homemade granola bar crumbled on top.  It's delicious and keeps me completely full and satisfied until lunch. Lunches are always leftovers.  We rarely eat dessert during the week, and our dinner drink of choice is water kefir soda.

Monday:: I'm trying my hand at homemade taquitos.  They might crash and burn like the tomato soup, but I'm going to make an effort.  I'll pair it with spanish rice, blackbeans (made in the crockpot and frozen).  All topped with guacamole, and salsa.

Tuesday:: Play date!

Wednesday:: Salmon cakes, pair with grilled zukes, and coleslaw.

Thursday::  Frittata with home grown potatoes, garlic, and eggs from my ladies!

Friday:: Popcorn dinner.  Yes, seriously we eat popcorn for dinner.  It's popcorn, leftovers, cheese slices, fruit, and cut up veggies.  Everyone gets as much as they want, and no one leaves hungry.  I adore Fridays because it is the easiest night of the week for making everyone happy!

Saturday:: Homemade pizza

Sunday::  Family dinner at my parent's!

I spent $16 at the fruit stand this week, and $25 at the grocery store.
